WINEMAKING WIZARDRY
The team harvested the grapes in March 2023. They picked early in the morning, then destemmed, crushed and cooled the fruit for an extended soak. Wild fermentation followed, with punch-downs two or three times a day to pull out every ounce of flavour. Once fermentation ended, the wine moved into old French oak for a 10-month rest. They bottled it with barely a filter, keeping the wine raw, real and full of life.
