WINEMAKING WIZARDRY
This Syrah is hand picked from a 32-year old Swartland grown vineyard that was planted in deep red clay soil with rich iron content. This is clone 1, which is early ripening and has loose clusters with soft skins. The grapes were 100% wholebunch fermented for around 14 days. After fermentation the grapes were gently pressed and transferred to old oak barrels for malolatic fermentation. It is then aged for 12 months in barrels and matured for a further 10 months in the bottle.
